しょうがは独特の辛味と香りを持ち、幅広く料理に利用されている香辛料のひとつです。この辛味と香りの成分は、ジンゲロンとショウガオールと呼ばれるもので、肉や魚の臭み消しに利用される他、殺菌作用もあります。さらに、血液の循環を良くして体を温めたり、発汗作用、胃液の分泌を良くして消化を促すなどの働きもあるため、昔から生薬としても利用されてきました。
