食材の豆知識 ~サバ~
サバにはIPA・DHAが豊富に含まれています。IPAは動脈硬化・心筋梗塞・脳卒中・高血圧といった生活習慣病を予防する働きがあります。また、DHAは心筋梗塞・高脂血症の予防や改善にも役立ちます。
この他にもIPAやDHAには、体内で増えすぎるとアレルギー反応を起こしやすくするアラキドン酸の働きを抑制する効果もあります。その為、花粉症などのアレルギー症状の改善にも有効です。
サバは脂肪やビタミン類が多く栄養価の高い魚ですが、アレルギーの原因となるヒスタミンが増えやすく、アレルギー反応を起こしやすい魚でもあります。サバによるアレルギー反応を防ぐために、なるべく鮮度のよいものを選び、加熱しないで食べる場合は、生ではなく酢でしめて、ヒスタミンの生成を抑制しましょう。
